zucchini, rice flour, egg whites, panko breadcrumbs, parmesan cheese, kosher salt, sea salt, marinara sauce

Prepare Zucchini

Trim the ends of each squash. Cut lengthwise, then place each half, cut side down. Make thin slices down, then, cut each stick into fries.

Assemble Breading Station

Place rice flour in a medium bowl. Place beaten egg whites in a  shallow dish. Place panko in a medium bowl. Add parmesan and salt to the panko, mix to combine.

Bread the Zucchini

Dredge in rice flour, transfer to egg wash and then panko. Place breaded zucchini on a wire rack on top of a rimmed baking sheet.

Cook zucchini fries for 20-24 minutes, or until crispy on all sides. Sprinkle zucchini with a generous pinch of maldon sea salt. Serve immediately with marinara.
