Ingredients

Cut the bacon into lardons, then cook in a cast-iron skillet.

Step 1

Meanwhile, whisk together eggs, milk, salt, pepper, mustard, scallions, and cheese.

Step 2

You’ll know the bacon is ready when it’s crispy on all sides.

Step 3

Remove the bacon, then add the cubed bread into the drippings.

Step 4

After a few minutes, pour the egg custard mixture on top.

Step 5

Sprinkle with remaining cheese, then transfer to an oven.

Step 6

Bake the strata until the edges are golden brown and puffed up.

Step 7

I like to top it with extra scallions. Enjoy it while hot!
