Ingredients

Pat the beef dry, then season it generously with salt and pepper.

Step 1

Working in batches, sear the beef on all sides, then transfer to a plate.

Step 2

Add bacon lardons, then cook until the fat begins to render.

Step 3

Next, add chopped carrots, whole shallots, and garlic.

Step 4

Stir in tomato paste and anchovy paste.

Step 5

Then sprinkle with a couple tablespoons of flour.

Step 6

Pour in Cognac or Brandy.

Step 7

Stir in a little Dijon mustard.

Step 8

Return the beef along with any juices to the pan, then add beef broth.

Step 9

Add fresh herbs, a dried bay leaf, and fresh orange zest.

Step 10

Stir well, then press a piece of foil or parchment paper on top.

Step 11

Cover with a lid, transfer to the oven, then cook for about 3 hours. Add olives at the end.
