Ingredients

Dissolve espresso powder in some vanilla extract.

Step 1

Place chocolate and heavy cream in a heat proof bowl.

Step 2

Cook over simmering water until the mixture is smooth.

Step 3

Place sugar and egg yolks in a bowl.

Step 4

Whisk together until the mixture turns a pale yellow.

Step 5

Slowly add a little chocolate to the egg mixture to temper the eggs.

Step 6

Combine chocolate, tempered eggs, and vanilla extract.

Step 7

Place egg whites in a stand mixer with sugar.

Step 8

Whip the egg whites until stiff peaks form.

Step 9

Gently fold the egg whites into the chocolate.

Step 10

Continue folding until no streaks remain.

Step 11

Top the chilled chocolate mousse with homemade whipped cream.

Step 11

Chocolate mousse cups with whipped cream and fresh berries. Delicious!
