Ingredients

Combine water and yeast, then whisk together.

Step 1

Pour in 60g all-purpose flour.

Step 2

Then whisk it well.

Step 3

Sprinkle another 60g flour on top, cover, then sit for 1-2 hours.

Step 4

To this, add 720g flour, 475ml cool water, 10g sugar, and 10g kosher salt.

Step 5

Knead, scraping down the sides as needed, for about 7 minutes. Rest for 30 minutes.

Step 6

Use the stretch-and-fold method to fold the dough.

Step 7

You’ll complete this process a total of 3x.

Step 8

Drizzle baking sheet with oil, then transfer the dough.

Step 9

After 1 hour, drizzle with a bit of olive oil, then use your hands to dimple.

Step 10

Sprinkle with flaky sea salt, then bake for 20-25 minutes at 450°F (232°C).

Step 11

Cool for at least 20 minutes before cutting.

Step 12

Slice into 6 squares (or more, if making smaller sandwiches).

Step 13

Use the bread to make incredible Italian sandwiches!
