Ingredients

Pat the fish dry, stuff the cavity with lemon, garlic, and herbs, then place on a lined baking sheet.

Whisk together kosher salt, egg whites and water until it resembles damp sand.

Cover the fish completely with to form a salt dome so it’s fully enclosed.

Bake for 35 minutes or until the internal temperature of the fish reaches 135°F (57°C).

Use the back of a spoon to crack the crust, then lift away in pieces.

I find it helpful to use a pastry brush to dust off excess salt.
