Ingredients

Sauté onion, carrot, garlic, and a little fresh dill in a large pot.

Step 1

Stir in barley, toast for a minute, then add broth and lemon juice.

Step 2

Bring to a boil, reduce to a simmer, then cook for 15 minutes.

Step 3

To make the meatballs, combine ground chicken, breadcrumbs, dill, spices, and feta cheese.

Step 4

Use your hands to thoroughly mix everything together.

Step 5

Use a small spoon to drop heaping teaspoons of the meatball mixture directly into the soup.

Step 6

After about 5 minutes, stir in fresh baby spinach.

Once the spinach has wilted, give it a good stir, then taste and adjust seasoning.
