Combine white miso paste, soy sauce, ginger paste, sugar, mirin, seasme oil, finely chopped garlic, and salt in a medium bowl, then whisk.
Add steak bites, then stir well to evenly coat. Let sit at room temperature for 15 minutes.
Heat a skillet over high heat. Add marinated steak in a single layer, then cook for 4-6 minutes, stirring occasionally. If you prefer steak closer to medium, cook an additional 1-3 minutes.
Either transfer the steak to a serving tray or serve directly in the skillet. Sprinkle with thinly sliced scallions and lots of fresh cilantro. Serve immediately.
