Preheat oven to 425 F. Combine all glaze ingredients in a small sauce pan. Heat over medium-high heat and bring to a boil. Remove from the heat.

Season turkey with salt, brush with glaze. On a baking sheet, layer prosciutto on top of each other to form a rectangle. Place turkey in the center , then fold the prosciutto around the tenderloin.

Cook in a preheated oven for 30-35 minutes or until the internal temperature is 165 F & prosciutto is crispy. Allow to rest 10 minutes before slicing and serving.

Combine white wine, butter, and sherry in a sauce pan. Bring to a boil, then allow to reduce for 2-3 minutes. Cut turkey into slices, then serve with sauce on the side for dipping. Garnish with chives.
