Ingredients

Combine sugar and egg yolks in the bowl of a stand mixer.

Step 1

Cream the eggs and sugar until light and fluffy then add extract.

Step 2

Combine flour and ground pistachios in a bowl.

Step 3

Whisk flour and ground pistachios together.

Step 4

Combine sugar and egg yolks in the bowl of a stand mixer.

Step 5

Cream the eggs and sugar until light and fluffy then add extract.

Add heavy cream to the egg mixture.

Step 7

Add the dry ingredients to the wet ingredients.

Step 8

Fold the dry ingredients into the wet ingredients.

Step 9

Whip egg whites until stiff peaks form.

Step 10

Working in batches, gently fold the egg whites to the mixture.

Step 11

Gently fold into the cake batter.

Step 12

Combine the pistachio cream and three milk mixture.

Step 13

Whisk until fully mixed.

Step 14

Transfer the cake batter to a prepared cake pan.

Step 15

Poke the cake all over with a wooden skewer.

Step 16

Pour the pistachio three milk mixture all over the top.

Step 17

When ready to serve cover the cake with whipped cream.

Cover the top of the tres leches with chopped pistachios.
