Ingredients

Brown the sausages on all sides. I like chicken sausage, but use any kind you prefer.

Step 1

Remove the sausages, then add sliced leeks and shallot. Cook until softened.

Step 2

To this, add 1 cup of a dry white wine (something good enough to drink).

Step 3

Add chicken broth, sherry vinegar, fresh tarragon, and sliced chiles.

Step 4

Stir in a can of butter beans (including liquid), then return the sausages.
