Ingredients

Cover chopped dates with boiling water, then stir in baking soda.

Step 1

After 20 minutes, purée the mixture until smooth and creamy.

Step 2

Beat butter and sugar until pale and fluffy, just a few minutes.

Step 3

Add eggs, treacle (or molasses, that’s fine!), and vanilla bean paste.

Step 4

Mix on medium speed for 1-2 minutes.

Step 5

Mix in cake flour and baking powder until just combined

Step 6

Finally, mix in the date mixture and heavy cream.

Step 7

Transfer the sponge batter to a prepared baking dish.

Step 8

Combine all toffee sauce ingredients in a sauce pan.

Step 9

Bring to a boil, stir well, then cook for another 2-3 minutes.

Step 10

Smooth out the top into a flat, even layer.

Step 11

Bake the cake for 40 minutes or until the center is just set.

Step 12

Drizzle half of the sauce right on top of the warm cake.

Step 13

It’s hard to put into words how delicious this really is.
