beef tenderloin, butter, salt, pepper, heavy whipping cream, garlic, tarragon, parmigiano reggiano, parsley, dijon, shiitake mushrooms, shallot

Cook the Tenderloin

Allow beef to sit at room temp for 1 hour before cooking. Melt butter, then pour on top of tenderloin. Cook at 275  for 1 hour 15 minutes.

Sauté Mushrooms

Heat butter, add mushrooms and cook until browned and crispy. Add minced shallot, then season with kosher salt. Transfer to a bowl and set aside.

Make Parmesan Cream Sauce

Place heavy cream in a sauce pan, add garlic and tarragon. Boil, then reduce until thickened. Remove garlic and tarragon, then discard. Add rest of ingredients to sauce.

Serve

Slice tenderloin ¼" – ½" thick. Then serve with cream sauce on top along with mushrooms and shallots. Sprinkle with flaky sea salt and black pepper.
