Here's what you'll need

First we'll cook the kale in salted water. It's headed straight for a food processor next!

Add walnuts, olive oil, Kosher salt,  and some cooking water then process until very smooth.

Add in extra olive oil as needed to thin out the sauce.

Next, crisp up pancetta! Love this salty addition to the creamy kale gnocchi!

Heat olive oil, thinly sliced garlic, and a good amount of red pepper flakes in a large skillet

Toast the cooked gnocchi, then add mascarpone, Pecorino, and the creamy kale sauce

Stir, mixing in cooking reserved cooking liquid as needed to thin the sauce

Mix in crispy pancetta and extra chopped walnuts! The texture on this one is INSANE!
