Combine ground chicken, scallions, blue cheese, seasoned breadcrumbs, buffalo wing sauce (or hot sauce), garlic, paprika, kosher salt, and black pepper in a large mixing bowl. Gently combine.
Divide meat into 2 oz portions, then carefully form into uniform patties. Place on a plate or tray until ready to cook.
Preheat a grill or cast iron skillet / griddle over medium-high heat, then coat with nonstick spray.
Cook chicken sliders about 3-4 minutes per side. Place a small pieces of cheddar cheese on each chicken patty.
Place a small amount of blue cheese dressing or ranch dressing on the bottom of each halved slider bun. Place a piece of lettuce on top then top with a chicken slider.
Drizzle with additional Frank's buffalo wing sauce (if desired) and blue cheese (crumbles or dressing). Place top half of bun on top.
Hold together with toothpicks, then serve immediately!
