Buffalo Chicken Sliders

Spicy, juicy buffalo chicken sliders are an easy, delicious way to feed a group! The patties are made from ground chicken, scallions, buffalo wing sauce, and a mix of spices, then topped with blue cheese dressing. Buffalo Chicken Sliders

Equipment

Ingredients

  • 1 lb ground chicken dark meat
  • 2 large scallions thinly sliced (about ¼ cup)
  • ¼ cup blue cheese crumbles
  • 3 Tbsp seasoned breadcrumbs see note below
  • 2 Tbsp Frank's buffalo wing sauce plus more for serving
  • 1 tsp garlic powder, crushed garlic, or 2 Tbsp garlic confit
  • ½ tsp sweet paprika
  • 1 tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • green lettuce for serving
  • 4-5 slices cheddar cheese for serving
  • blue cheese or ranch dressing for serving
  • 10 slider buns

Instructions

  • Combine ground chicken, scallions, blue cheese, seasoned breadcrumbs, buffalo wing sauce (or hot sauce), garlic, paprika, kosher salt, and black pepper in a large mixing bowl. Gently combine.

  • Divide meat into 2 oz portions, then carefully form into uniform patties. Use your thumb to press down slightly in the center of each chicken patty to form a small indentation. (Burgers puff up as they cook -- this helps ensure an even, uniform patty.) Place on a plate or tray until ready to cook.

  • Preheat a grill or cast iron skillet / griddle over medium-high heat, then coat with nonstick spray.
  • Cook chicken sliders until an internal temperature of 165 F is reached, about 3-4 minutes per side. About 1-2 minutes before finished cooking, place a small pieces of cheddar cheese on each chicken patty.

  • Place a small amount of blue cheese dressing or ranch dressing on the bottom of each halved slider bun. Place a piece of lettuce on top (if using), then top with a chicken slider.
  • Drizzle with additional Frank's buffalo wing sauce (if desired) and blue cheese (crumbles or dressing). Place top half of bun on top. Hold together with toothpicks, then serve immediately!

Notes

  • We recommend using dark meat ground chicken or dark meat ground turkey, not white meat. This ensures the juiciest burger!
  • If you do not have seasoned breadcrumbs, you can use unseasoned breadcrumbs and add 1 tsp oregano or 1 tsp Italian seasoning.
  • Nutritional facts do not include additional blue cheese dressing or buffalo wing sauce on chicken sliders.
