Few things make us happier than buffalo wing sauce. That recognizable flavor can be added to many dishes, from cheesy dips to risotto to sandwiches. And buffalo chicken sliders? Well, they may just be our favorite yet!
Here’s why we love ’em so much:
- Juicy, moist bite-size burgers (which means you can eat more, right?)
- That familiar hot, spicy, and tangy buffalo wing sauce, both inside the patties and on top!
- Little bits of blue cheese popping through the chicken patties (also helps to keep the sliders from drying out!)
- Extra creamy blue cheese and ranch dressing for dipping
- Easily feed a large group, perfect for entertaining on game days!

Ingredient Notes
- Ground chicken (or turkey)
- Seasoned breadcrumbs (unseasoned will work, but we do not recommend panko breadcurmbs!)
- Scallions
- Blue cheese or gorgonzola cheese
- Frank’s Buffalo wing sauce
- Garlic powder, crushed garlic, or garlic confit
- Paprika
- Kosher salt
- Freshly ground black pepper
- Cheddar cheese
- Slider buns
- Lettuce, optional

How To Make Buffalo Sliders
- Combine ground chicken, scallions, blue cheese, seasoned breadcrumbs, buffalo wing sauce (or hot sauce), garlic, paprika, kosher salt, and black pepper in a large mixing bowl. Gently combine.
- Divide meat into 2 oz portions, then carefully form into uniform patties. Place on a plate or tray until ready to cook.
- Preheat a grill or cast iron skillet / griddle over medium-high heat, then coat with nonstick spray.
- Cook chicken sliders until an internal temperature of 165 F is reached, about 3-4 minutes per side. About 1-2 minutes before finished cooking, place a small pieces of cheddar cheese on each chicken patty.
1 lb ground chicken will yield approximately 10 (2 oz) sliders.

Assemble Buffalo Chicken Sliders
Place a small amount of blue cheese dressing or ranch dressing on the bottom of a halved slider bun. Place a piece of lettuce on top (if using), then top with a chicken slider.
Drizzle with Frank’s buffalo wing sauce and additional blue cheese (crumbles or dressing). Place top half of bun on top. Serve immediately!
Optional: secure with toothpicks if serving on a platter for a large group!

Tips For The Best Sliders
- Do not buy lean ground chicken (or turkey, if using). Stick with dark meat to keep these burgers moist and juicy!
- Work quickly when mixing ground meat, whether for burgers, meatballs, or meatloaf. Overworking the meat will result in dense, tough sliders!
- Use your thumb to press down slightly in the center of each chicken patty to form a small indentation. Burgers puff up as they cook — this helps ensure an even, uniform patty.
- We recommend using the Thermapen MK4 to check for doneness on all meats!

What To Serve With Buffalo Sliders
Keep it simple so as not to overpower the buffalo flavor!
- Carrot sticks or celery are classic sides (with extra blue cheese or ranch dressing for dipping!)
- A simple green salad, lightly dressed
- French fries, obviously!
Don’t forget an ice cold beer!

- ½ tsp sweet paprika
- 1 tsp kosher salt
- ¼ tsp freshly ground black pepper
