Tender, juicy Buffalo Chicken Sliders are an easy, delicious way to feed a group! The patties are made with ground chicken, scallions, buffalo wing sauce, and a mix of spices, then topped with blue cheese dressing. Perfect game day meal, and they cook up in less than 10 minutes!

Ingredients

For the Burgers

  • 1 lb ground chicken
  • 2 large scallions, thinly sliced (about ¼ cup)
  • ¼ cup blue cheese crumbles
  • 3 Tbsp seasoned Italian breadcrumbs
  • 2 Tbsp Frank's buffalo wing sauce, plus more for serving
  • 1 tsp garlic powder, crushed garlic, or 2 Tbsp garlic confit
  • ½ tsp sweet paprika
  • 1 tsp Kosher salt
  • ¼ tsp freshly ground black pepper

  • 4-5 slices Cheddar cheese
  • Blue cheese or ranch dressing
  • 10 Slider buns

Instructions

  • Prepare the ground chicken. Combine 1 lb ground chicken, 2 scallions, ¼ cup blue cheese, 3 Tbsp seasoned breadcrumbs, 2 Tbsp buffalo wing sauce (or hot sauce), 1 tsp garlic, ½ tsp paprika, 1 tsp kosher salt, and ¼ tsp black pepper in a large mixing bowl. Gently combine.
  • Portion into burger patties. Divide meat into 2oz portions, then carefully form into uniform patties. Use your thumb to press down slightly in the center of each chicken patty to form a small indentation. (Burgers puff up as they cook —this helps ensure an even, uniform patty.) Place on a plate or tray until ready to cook.
  • Preheat a grill or cast iron skillet / griddle over medium-high heat, then coat with nonstick spray.
  • Cook chicken patties Cook chicken sliders until an internal temperature of 165°F / 74°C is reached, about 3-4 minutes per side. About 1-2 minutes before finished cooking, place a small pieces of cheddar cheese on each chicken patty.
  • Assemble the sandwiches. Place a small amount of blue cheese dressing or ranch dressing on the bottom of each halved slider bun. Place a piece of lettuce on top (if using), then top with a chicken slider.
  • Serve. Drizzle with additional Frank's buffalo wing sauce (if desired) and blue cheese (crumbles or dressing). Place top half of bun on top. Hold together with toothpicks, then serve immediately!

Notes

  • I recommend using dark meat ground chicken or turkey to ensure the juiciest possible burgers.
  • Nutritional facts do not include additional blue cheese dressing or buffalo wing sauce on sliders.
