Here's what you'll need

Make the miso marinade: combine miso paste, sake, soy sauce, ginger paste, mirin, honey, salt, and pepper, then whisk

Pour over cod, then marinate for at least 1 hour or up to overnight

When ready to cook, sauté carrots,  shiitakes, and scallions

Transfer to a plate, then sear cod

Carefully flip, then return veggies to the pan and pour remaining marinade on top

Bake, then sprinkle with sesame seeds

Serve with white rice and roasted broccoli
