Preheat oven to 450F. Prick the sausages all over with a sausage pricker or paring knife, being careful not to cut all the way through.
Line a sheet pan with parchment paper, then add sausages. Add bell peppers, red onion wedges, and potatoes. Drizzle with olive oil, then sprinkle the vegetables only with salt and pepper.
Cook for 30 minutes, flipping the sausage over and tossing the veggies every 10 minutes.
Combine olive oil, red wine vinegar, lemon juice, minced garlic, Dijon mustard, dried oregano, and salt in a mason jar. Seal, then shake until mixed.
Pour the dressing on top of the sausage and veggies, then toss to combine. Serve immediately with chopped parsley and lemon wedges.
