Lay out a large sheet of plastic wrap, then sprinkle all over with everything bagel seasoning blend. Lay smoked salmon slices on top of the seeds, overlapping the pieces, to create a rectangle that is roughly 18×6-inches long.
In a small bowl, combine whipped cream cheese, sliced scallions, and lemon zest. Stir until well mixed.
Using a spatula or a spoon, spread the cream cheese mixture evenly over the entire surface of the salmon. Lay out all the avocado and cucumber across the entire length of the salmon.
Use the plastic wrap to help lift and roll the salmon slices over the filling, until you’ve rolled the entire rectangle into a log.
Using a sharp knife, cut the log into bite-size pieces. Transfer to a plate so that they’re standing up. Top each roll with a thin slice of jalapeño. Enjoy with soy sauce for dipping!
