In a food processor, combine sour cream, avocado, garlic, the zest and juice of 1 lime, and salt. Process until smooth, transfer to a bowl. Refrigerate until needed.

Peel the sweet potato, then use a box grater or the grating attachment on a food processor to shred into a medium grate. Place in a large mixing bowl.

To the bowl, add jalapeño, scallions, cilantro and chives, egg, egg yolk, gruyere, cumin, chili powder, and salt, then stir. Sprinkle in flour, then fold until flour has been absorbed.

Heat oil in a skillet. When hot, evenly portion out the fritters, then press into patties and add to the pan. Cook for about 3 minutes per side, until golden brown.

Transfer the fritters to a paper towel-lined wire rack, then sprinkle lightly with salt. Serve immediately with avocado crema and lime wedges.
