- 3 lbs Yukon gold potatoes or Russet potatoes
- 1 cup heavy cream or whole milk
- 6 Tbsp unsalted butter
- 3 cloves garlic, peeled and smashed
- ¾ cup sour cream
- ¼ cup chives, thinly sliced, plus more for serving
- 1½ tsp Kosher salt
- ½ tsp freshly cracked black pepper
Boil the potatoes: Peel and cut into ½-inch cubes. Place in a large pot and cover with lukewarm water. Bring to a rapid boil and cook 10–12 minutes, until very tender—a knife should slide through with zero resistance.
Warm the dairy: While potatoes cook, combine heavy cream (or whole milk), butter, and smashed garlic cloves in a small saucepan. Bring to a gentle simmer and cook 10 minutes to infuse. Discard garlic, keep warm.
Rice the potatoes: Drain immediately, then pass through a ricer or food mill fitted with the smallest holes into a large bowl. Work in batches as needed.
Finish and serve: Gently fold in the warm cream-butter mixture, sour cream, chives, salt, and pepper. Taste and adjust seasoning. Top with extra chives and serve immediately.
- Stovetop (best method): Transfer mashed potatoes to a saucepan. Add a splash of heavy cream, milk, or chicken stock. Warm over medium-low heat, stirring often, until hot and creamy. Add more liquid as needed.
- Microwave: Place in a microwave-safe bowl and cover tightly with plastic wrap. Poke a few holes, then heat on high for 3–4 minutes, stirring as needed, until warmed through.
- Oven: Spread in a casserole dish and reheat at 350°F (175°C) for about 20 minutes, or until hot throughout.
