- 2 bunches scallions, thinly sliced
- ¼ cup ginger paste or a 1-inch piece of fresh ginger, peeled and grated
- ¾ tsp Kosher salt
- 1 Tbsp soy sauce
- 1 tsp rice wine vinegar
- ½ cup neutral oil
Prep the ingredients. Thinly slice two bunches scallions and grate ginger, if using fresh.
Combine ingredients. In a small bowl, combine ¾ tsp Kosher salt, 1 Tbsp soy sauce, 1 tsp rice wine vinegar, and ½ cup neutral oil, then whisk. Add sliced scallions and ginger, then stir to combine. Can be used immediately, but is best after at least 15 minutes.
