- 1 (15oz) can garbanzo beans, rinsed and drained
- 1 Tbsp extra virgin olive oil
- ½ tsp za’atar
- ½ tsp sweet paprika
- ½ tsp cumin
- ½ tsp Kosher salt
- ¼ tsp ground cinnamon
- ⅛ tsp coriander
Season the chickpeas. Preheat oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper. Drain, rinse, and dry chickpeas, then place in a large mixing bowl. Drizzle with 1 Tbsp olive oil, ½ tsp each of za'atar, sweet paprika, cumin, and Kosher salt, ¼ tsp ground cinnamon, and ⅛ tsp ground coriander. Toss to evenly coat, then pour onto the prepared baking sheet, making sure chickpeas are in an even single layer.
