Maple-Roasted Spiced Cocktail Nuts with Rosemary

Warm spices, a touch of heat, and just enough sweetness make these spiced nuts completely irresistible. Maple syrup and rosemary bring depth, while cayenne adds a subtle kick. Perfect for cocktail hour, holiday gatherings, or anytime you need an easy, crowd-pleasing snack.

Ingredients

  • 1 cup pecans
  • 1 cup walnuts
  • ½ cup cashews
  • ½ cup almonds
  • ¼ cup maple syrup, or light brown sugar
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp chopped rosemary
  • 1 Tbsp chopped thyme, or sage
  • ½ tsp ground cinnamon
  • ¼ tsp cayenne pepper
  • 1 tsp Kosher salt, divided

Instructions

  • Prepare the nuts. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. In a large bowl, combine all ingredients except for ½ tsp Kosher salt (reserve). Toss to combine, then place on baking sheet.
  • Toast. Bake for 25-30 minutes, or until golden brown and fragrant. Remove from oven and immediately sprinkle with remaining ½ tsp Kosher salt. Let cool (they'll crisp up during this time), then serve immediately or store in an airtight container.

Notes

  • Use unsalted nuts: All nuts here are roasted but unsalted so you can control the seasoning. If using salted nuts, reduce (or wait to add) the kosher salt and adjust to taste at the end.
  • Sweetener swap: Brown sugar can replace maple syrup. Maple syrup creates a smoother, glossier coating, while brown sugar gives a slightly more textured finish.
  • Storage: Spiced nuts stay crunchy for up to 1 week when stored in an airtight container.
