Rich, Buttery Mushrooms On Toast
This is the holiday appetizer that always kickstarts our Thanksgiving meal! Sautéed mushrooms on toast with marsala wine and fresh herbs are rich, buttery, and perfect for fall entertaining. Served over crispy toasted bread, they soak up every bit of the savory sauce.

- 1 lb white button mushrooms, cleaned, stems removed, thinly sliced
- 4 Tbsp unsalted butter
- 1 Tbsp fresh thyme leaves, finely chopped
- ½ tsp kosher salt
- pinch freshly ground black pepper
- 1 Tbsp all-purpose flour
- 3 Tbsp marsala wine
- 3 Tbsp low-sodium chicken broth
- 1 Tbsp fresh parsley, finely chopped
- Flaky sea salt for serving
- 4 slices white bread, country bread, or artisan bread
Cook the mushrooms. Heat butter in a large skillet over medium-high heat. When melted, add the mushrooms and spread them into an even layer (no crowding!). Cook undisturbed until deeply golden on the first side, about 3-5 minutes. Flip or stir, then continue cooking until browned all over, about 3 minutes more. Meanwhile, toast the bread.
Add marsala. Season the mushrooms with fresh thyme, Kosher salt, and black pepper. Sprinkle flour over the top and cook for 1 minute, stirring, until fully absorbed. Pour in the Marsala, scraping up any browned bits from the bottom of the pan, and cook until mostly evaporated, about 30 seconds.
Finish, then serve. Add the chicken stock and stir until the mixture thickens and turns silky and creamy. Taste and adjust seasoning as needed. Spoon generously over toasted bread, then garnish with chopped parsley and a pinch of flaky sea salt. Serve immediately while warm and luscious.
- Mushrooms: White button mushrooms can be swapped for shiitake, cremini, or a mix of wild mushrooms for deeper flavor.
- No Marsala wine? Use sherry in a pinch—the flavor will be slightly brighter and less sweet.
