Here's What You'll Need
cod fillets, olive oil, salt, pepper, panko, ritz crackers, parsley, parmigiano reggiano, garlic, lemon, butter
Preheat oven to 350 F. Cut cod fillets into 2" pieces. Coat the bottom of a baking dish with olive oil. Place cod on top, then season with salt and pepper.
In a mixing bowl, combine panko, Ritz cracker crumbs, parsley, Parmesan, garlic, and lemon zest. Combine with a fork, then drizzle on melted butter. Mix well.
Sprinkle breadcrumb mixture on top of the cod pieces. Drizzle with olive oil, then bake for 12-18 minutes. Cod is fully cooked when an internal temperature of 145 F has been reached.
Serve baked cod with additional parsley, if desired, and lemon wedges.
