Here's What You'll Need
butter, chocolate, sugar, greek yogurt, eggs, vanilla extract, flour, dark chocolate cocoa powder, baking soda, salt, rainbow sprinkles
Combine butter and chocolate in a bowl. Microwave on high in 20 second increments, stirring in between, until all chocolate and butter is very smooth.
Add sugar, Greek yogurt, eggs, and vanilla extract, then whisk to combine.
In a separate bowl, whisk together all-purpose flour, cocoa powder, baking soda, and salt.
Add the wet ingredients to the dry, then whisk until flour is just mixed in. Gently fold in rainbow sprinkles.
Fill each muffin liner. Bake for 5 minutes, then drop temperature to 350 F. Cook for 3-4 minutes more. Let sit, then transfer to a wire rack to cool. Serve warm or at room temperature.
