Ingredients

Season cubed butternut squash with olive oil, garlic, cinnamon, salt, and pepper.

Step 1

Toss well, then roast until the squash is tender.

Step 2

Meanwhile, sauté red onion and scallion whites in a large pan.

Step 3

Once softened, add the chorizo and cook until browned.

Step 4

Stir in chopped garlic and lots of fresh sage.

Step 5

Add cooked pasta, squash, mascarpone, spinach, cheese, and pasta water.

Step 6

Give it a really good stir, then add a few tablespoons of butter.

Step 7

Can you imagine a more delicious fall pasta?! I can’t.

Step 8

Before serving, drizzle with extra virgin olive oil, then top with lots of pepper, more cheese, and a sprinkle of flaky sea salt.
