Put cabbage in a colander. Sprinkle with salt, toss to coat. Drain for 10-15 minutes. Transfer to a bowl, add red onion, mayonnaise, sour cream, scallions, lime juice, and cilantro. Toss well, then refrigerate 1 hour.

In a medium bowl, combine tomatoes, red onion, jalapeño, cilantro, and the juice of 2 limes. Season with salt, then taste and adjust seasoning. Set aside.
