Pat steaks dry then place them on a parchment-lined rimmed baking sheet. Allow to sit at room temperature for at least 15 minutes. Preheat oven to 225F.

Sprinkle each steak with salt. About 2-3 tsp per filet. Season on all sides with a smaller amount of freshly ground black pepper, as much as you like.

Place filets into oven and cook according to desired doneness. We recommend 25 minutes for medium rare.

Heat a cast iron skillet over high heat. When it begins to smoke, add neutral oil. Place steaks in skillet, cook for about 2 minutes total, flipping steaks every 15-20 seconds until a crust has formed.

Let the steaks sit for 5-10 minutes to rest, then serve immediately. We recommend having flaky sea salt on standby for serving.
