Israeli couscous, salt, olive oil, lemon juice, oregano, chives, shallot, feta cheese, black pepper

Cook the Couscous

Bring water to a rapid boil over high heat. Add couscous and salt, return to a boil. Reduce to a simmer, cover the pan and cook for 15 minutes. Remove lid, then use a fork to fluff the couscous.

Make the Dressing

Combine olive oil, fresh lemon juice, lemon zest, chopped oregano, thinly sliced chives, and thinly sliced shallot. Stir well.

Dress the Salad

When couscous is fully cooked, pour the dressing on top. Toss very well. Stir in feta cheese, taste and adjust seasoning. Garnish with black pepper before serving.
