Here's What You'll Need
zucchini, olive oil, garlic, salt, eggs, sartori bellavitano, sour cream, basil, chives, black pepper, flaky sea salt
Wash and dry zucchini, then thinly slice into rounds. Heat olive oil in a skillet. Add sliced zucchini and cook for 5 minutes, or until just beginning to brown.
While the zucchini is cooking, combine eggs, sour cream, grated cheese, basil, chives, salt, and black pepper. Whisk to combine.
Add garlic and salt, cook until fragrant. Pour egg and cheese mixture on top, stir once or twice. Sprinkle with grated cheese, then cook until the edges begin to set.
Transfer the skillet to a preheated oven and cook for 20-23 minutes, or until the frittata is light golden brown and puffed up.
Allow the frittata to cool for 5 minutes, then slice and serve immediately. We recommend a sprinkle of flaky sea salt on each piece.
