Kitchen glove or kitchen towel (yes, you truly need this to protect your hand)

Ingredients

  • ½ cup (118ml) red wine vinegar or, if you have it Champagne vinegar
  • 2 Tbsp shallot, minced
  • ½ tsp freshly cracked black pepper
  • pinch of kosher salt

Instructions

  • Make the quick mignonette sauce. Combine all ingredients in a small bowl, then whisk to combine. Set aside at room temperature for 2 hours.

Notes

  • No red wine vinegar? Use white wine vinegar or Champagne vinegar (delicate and floral).
  • The flavor intensifies as it sits, though you can of course enjoy it immediately.
  • Store in an airtight container in a fridge. Because it's vinegar-based with no perishable ingredients, it'll keep for months!
