Campari Gin Fizz (Sweet and Sour Cocktail)
The Campari Gin Fizz is a sweet and sour cocktail that is made with gin, campari, and fresh lemon juice. To cut their sharp flavors, simple syrup and an egg white are mixed in as well (the latter of which provides a smooth, silky texture and a frothy top). Finish with club soda for the classic fizz cocktail, or leave it off and strain into a coupe glass for a Campari Gin Sour.

Highball glass if making Campari Gin Fizz
- 1½ oz gin, such as The Botanist
- ¾ oz Campari
- ¾ oz fresh lemon juice, about ½ large lemon
- ½ oz simple syrup
- 1 large egg white
- 1 oz club soda, chilled, optional
- Lemon peel, for garnish
Shake ingredients together. Place 1½ oz gin, ¾ oz Campari, ¾ oz lemon juice, ½ oz simple syrup, and egg white in a cocktail shaker filled halfway with ice. Secure lid, then shake for 20 seconds to aerate the drink until the egg white is frothy.
To make a Campari Gin Fizz: Strain into a chilled highball glass filled halfway with ice. Top off with chilled club soda, then garnish with lemon peel.
To make a Campari Gin Sour: Strain into a chilled coupe glass without adding club soda.
- Simple syrup: Combine 1 cup water and 1 cup sugar in a small saucepan. Heat gently (do not boil) until the sugar dissolves. Refrigerate airtight; keeps for several weeks.
