Dark Chocolate Chunk Browned Butter Blondies

I'm totally obsessed with these Brown Butter Blondies, and not just because they're loaded with dark chocolate chunks. They've got that perfect crackly top that is crucial in a good brownie, but they're definitely more of a chewy chocolate chip cookie. Because truly, why can't we have both? Made with just 8 ingredients, these will become a go-to easy dessert you make again and again.

Ingredients

  • 14 Tbsp (1¾ sticks) unsalted butter
  • cups dark brown sugar
  • 2 large eggs, room temperature
  • 1 Tbsp pure vanilla extract
  • 2 cups white pastry or all-purpose flour
  • ½ tsp baking powder
  • tsp Kosher salt
  • 1 cup dark or bittersweet chocolate chunks or chocolate chips

Instructions

  • Make the browned butter. Preheat oven to 350°F / 175°C and grease an 8x8-inch pan with nonstick baking spray.. Melt 14 Tbsp butter in medium saucepan over medium heat. Continue cooking until butter stops foaming and there are brown bits on the bottom of the pan, about 5 minutes.
  • Add sugar. Transfer butter to a large mixing bowl, then add in 1¾ cups brown sugar and whisk until well combined. Set aside to cool for 5 minutes.
  • Add remaining wet ingredients. Add 2 eggs, whisking after each addition for about 10 strokes, then add 1 Tbsp vanilla extract and stir to combine.
  • Mix the dry ingredients. In a separate bowl, whisk together 2 cups flour, ½ tsp baking powder, and 1 ¼ tsp Kosher salt. Pour into the batter mix, then whisk only until a few pockets of flour remain. Fold in 1 cup chopped chocolate, then turn batter into prepared pan. Use an offset spatula to smooth out into an even layer.
  • Bake the blondies. Bake for 26-28 minutes, or until top is light golden brown. Cool in pan on wire rack, then transfer from pan and cut into 2x2 squares.

Notes

  • Cook time matters: Be careful not to over bake! The blondies should be slightly undercooked in the center or they'll dry out.
