Juicy Turkey Feta Burgers with Apple Cabbage Slaw

Turkey feta burgers with kale and apple cabbage slaw are tender, juicy, and perfect any time of year! I especially love to serve these when we gather with friends to watch sports events and pair them with chips or fries. A completely satisfying burger that's also a bit on the lighter side.

Ingredients

For the Burgers

  • 1 lb ground turkey or ground chicken
  • ½ cup lacinato kale, stems removed and roughly chopped
  • cup feta cheese, crumbled
  • 2 scallions, thinly sliced
  • 2 Tbsp Worcestershire sauce
  • 2 cloves garlic, finely chopped or grated
  • 1 tsp Kosher salt
  • ¼ tsp freshly ground black pepper

For the Apple Cabbage Slaw

  • 1 cup green cabbage, shredded
  • 1 medium apple, peeled, cored, and cut into matchsticks
  • 1 stalk celery, thinly sliced
  • 1 Tbsp extra virgin olive oil
  • 2 tsp apple cider vinegar
  • 1 Tbsp fresh dill, finely chopped
  • 1 tsp fresh mint, finely chopped
  • 1 tsp Kosher salt
  • ¼ tsp freshly ground black pepper
  • Any additional sauces you like, such as: mayo, Parmesan peppercorn sauce, tzatziki, Greek yogurt, sour cream, anything!

Instructions

  • Form the burgers. Combine all burger ingredients in a medium bowl, then gently mix. Form into four patties. Set aside.
  • Make the slaw. Combine all slaw ingredients in a large bowl, then toss to thoroughly coat. Taste and adjust seasoning, adding more salt, pepper, or vinegar as desired. Refrigerate until needed.
  • Cook the burgers. When ready to eat, heat a large cast iron skillet or griddle over medium-high heat, then coat with cooking spray. When hot, add burgers and cook for about 5 minutes per side, or until internal temperature reaches 165°F / 74°C.
  • Assemble. Place any sauce or additional condiments you want on the bottom bun (highly recommend something creamy like a parmesan peppercorn sauce!), then add the burger. Top with about ¼ cup of slaw, the top bun, and serve immediately.
