Equipment

Toothpicks, for serving

Ingredients

  • ¼ cup white miso paste
  • 2 Tbsp reduced-sodium soy sauce (or tamari if make gluten-free)
  • 1 Tbsp ginger paste
  • 1 Tbsp mirin
  • 1 Tbsp granulated sugar
  • 2 tsp sesame oil
  • 2 cloves garlic, finely chopped
  • 1 tsp Kosher salt
  • 2-3 lbs steak, such as filet mignon, sirloin, or ribeye
  • Fresh cilantro
  • Scallions thinly sliced

Instructions

  • Make the miso marinade. Combine ¼ cup white miso paste, 2 Tbsp reduced-sodium soy sauce, 1 Tbsp ginger paste, 1 Tbsp granulated sugar, 1 Tbsp mirin, 2 tsp seasme oil, 2 cloves of finely chopped garlic, and 1 tsp Kosher salt in a medium bowl, then whisk.
  • Marinate the steak. Add steak bites, then stir well to evenly coat. Let sit at room temperature for 15 minutes.
  • Cook the steak bites. Heat a large skillet over high heat. When very hot, add marinated steak in a single layer, then cook for 4-6 minutes, stirring occasionally, or until browned on all sides, but medium rare in the center. If you prefer steak closer to medium or medium well, cook an additional 1-3 minutes.
  • Garnish, then serve! Either transfer the steak to a serving tray or serve directly in the skillet. Sprinkle with thinly sliced scallions and lots of fresh cilantro. Serve immediately.
