Poppy Seed Pecan Chicken Salad with Greek Yogurt

  • ½ cup Greek yogurt
  • ½ cup mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp finely chopped tarragon
  • 1 Tbsp chives thinly sliced
  • ½ tsp Kosher salt
  • ½ tsp freshly ground black pepper
  • 1 rotisserie chicken white meat only, pulled (about 2 cups), skin removed
  • 2 cups seedless red grapes sliced in half
  • ½ cup pecans roughly chopped
  • 1 tsp poppy seeds

Instructions

  • Make the dressing. Combine ½ cup Greek yogurt, ½ cup mayonnaise, 1 Tbsp apple cider vinegar, 1 Tbsp chopped tarragon, sliced chives, ½ tsp Kosher salt, and ½ tsp black pepper in a large mixing bowl, then whisk to combine.
  • Add remaining ingredients. Add pulled chicken, halved grapes, chopped pecans, and 1 tsp poppy seeds, then stir until evenly mixed. Taste and adjust seasoning as needed. Serving suggestions: Enjoy on a salad, in a wrap or sandwich, with crackers!
