Summer Watermelon Salad with Basil & Feta
When watermelon is at its peak, this is the salad I make on repeat. Sweet melon, briny feta, and fragrant basil are finished with olive oil and flaky sea salt for a dish that’s fresh, vibrant, and ready in minutes. My go-to summer cookout side dish!

- ½ medium watermelon, (about ~5-6 cups), cut into ½" cubes
- 2 oz feta cheese, crumbled, plus more for garnish
- 1 Tbsp fresh basil, thinly sliced
- ½ Tbsp extra virgin olive oil
- 1 tsp flaky sea salt
- ⅛ tsp freshly ground black pepper
Assemble and toss shortly before serving. Combine all ingredients in a large bowl, then gently toss to combine. Taste and adjust seasonings as needed. When ready to serve, garnish with a little extra feta cheese and flaky sea salt on top.
- I do not recommend making this salad more than 1-2 hours in advance. The longer the watermelon sits with sea salt on it, the more water is drawn out. No one wants a soggy salad. Best enjoyed on the first day.
