Here's what you'll need
Fresh scallions, ginger paste (or fresh ginger, peeled and grated), soy sauce, rice vinegar, Kosher salt, and a neutral flavored oil
Using a sharp knife, thinly slice two bunches of scallions. Set aside.
Combine sauce ingredients
In a small bowl, combine oil, soy sauce, vinegar, salt, and ginger.
Stir it all together
Whisk thoroughly to combine, then add thinly sliced scallions and stir.
Serve with everything
Ginger scallion sauce can be used immediately, but is best after at least 15 minutes. Serve with everything!!
