Have you ever tried a sauce that was so intensely flavored and delicious that you wanted to put it on literally everything? That’s this ginger scallion sauce! It’s made from only 6 ingredients and gets better the longer it sits.
This sauce is gingery, oniony, and salty — a winning trifecta that perfectly compliments all kinds of Asian-inspired dishes! Everything from dumplings and noodles to soy sauce marinated steak to a plain bowl of white rice benefits from a hearty spoonful of ginger scallion sauce.
And with a 5 minute prep time, you’ll make this often! Can’t beat that!

Ingredients For Ginger Scallion Sauce
- Scallions (green onions), thinly sliced
- Ginger paste or freshly grated ginger
- Kosher salt
- Reduced-sodium soy sauce
- Mirin or rice vinegar
- Neutral oil, such as grapeseed oil or canola oil
If using freshly grated ginger, use a 2″ piece that has been peeled.
The simple combination of these ingredients creates a flavorful, Asian-inspired sauce that can be added to everything from grilled steak to roasted salmon or rotisserie chicken.

How To Make Ginger Scallion Sauce
- Prep the ingredients. Thinly slice scallions and grate ginger, if using fresh.
- Combine ingredients. In a small bowl, combine all ingredients, then whisk.
Et voila! A killer sauce in about 5 minutes flat!
The sauce can be used immediately, but is best after at least 30 minutes. Don’t want to bite into large pieces of scallions? Go ahead and finely chop them instead.
And if in general you prefer a more mild onion flavor, you can sauté the scallions in a couple teaspoons of canola or grapeseed oil before adding them to the sauce. Cook them long enough for the scallions to sizzle and become fragrant, about 1-2 minutes over medium-high heat.

How To Store Ginger Scallion Sauce
This sauce has a shelf life of 1 week. Keep in an airtight, sealed container in a refrigerator until needed.
The vibrant green hue from fresh scallions may fade as the sauce ages, but that has no effect on the flavor. It’s simply how the green onions react in the sauce and to being exposed to air.

Our Favorite Way To Use This Sauce
Use our ginger scallion sauce on everything! You can toss it with chicken wings, spoon it over grilled steak, or serve alongside roast salmon in rice bowls.
But beyond meat, this is a wonderful way to impart serious flavor into veggies as well! Imagine tossing roasted brussel sprouts or oven roasted broccoli with ginger scallion sauce? Epic.
Toss noodles, shishito peppers, or your favorite meatballs with the sauce. Serve over rice with soy sauce eggs or fried eggs.
Add red pepper flakes, then use as a dipping sauce for dumplings! Really, anything where you want to add that gingery, onion flavor!

Ingredients
- 2 bunches scallions thinly sliced
- ¼ cup ginger paste see note for fresh ginger
- ¾ tsp Kosher salt
- 1 Tbsp soy sauce
- 1 tsp rice wine vinegar
- ½ cup grapeseed oil, canola oil, or avocado oil
Instructions
- Prep the ingredients. Thinly slice scallions and grate ginger, if using fresh.
- Combine ingredients. In a small bowl, combine all remaining ingredients, then whisk. Add sliced scallions and ginger, then stir to combine. Can be used immediately, but is best after at least 15 minutes.
Notes
- Will keep in an airtight sealed container in a refrigerator for up to 1 week.
- If using fresh ginger, peel and grate a 2″ piece then add to sauce in place of ginger paste.
- Serving suggestions: tossed with noodles, used as a dipping sauce for dumplings, chicken, beef, or seafood, or served over rice with a fried egg.
