Combine all the wet ingredients in the bottom of a large mixing bowl. Next, add in the ground chicken and dry ingredients and blend until just combined.

Form the Meatballs

Use a cookie scoop to portion the meat mixture into meatballs of the same size, roughly 2" round. Roll into balls, then place on a parchment-lined baking sheet.

Broil the Meatballs

Cook Gochujang chicken meatballs on high for 6 minutes, flip once, then cook 6 minutes more.

Toss in Sauce and Serve

Combine glaze ingredients in a bowl, whisk to combine and toss with meatballs. Serve over white rice with kimchi, pickled carrots and daikon. Garnish with sesame seeds and scallions, then serve!
