Place chopped lettuce in a mixing bowl. To this, add avocado, cooked corn, halved cherry tomatoes, cubed pepperjack cheese, crispy shallots, and cilantro. Add chopped chicken, if using.

Turn the ingredients out onto a cutting board, then roughly chop into bite size pieces with a knife.

Return salad to the bowl, drizzle as much cilantro lime dressing as you like. Toss then transfer to a bowl. Taste and adjust seasoning. Serve immediately with an extra sprinkling of crispy shallots.
