Here's what you'll need
7 minute soft boiled eggs, artisan bread, mayo, lemon juice, flaky sea salt, and fresh herbs
Cook the eggs
Place cold, week old eggs into a pot of boiling water with 1 Tbsp vinegar. Set a timer for 7 min, then transfer eggs to an ice bath.
Toast slices of your favorite bread, then top with a schmear of mayo mixed with lemon juice. Add eggs on top, then halve.
Smash the eggs
Use a fork to smash the eggs on each pieces of toast. We recommend 1-2 eggs per person.
Add a generous pinch of flaky sea salt, black pepper, and lots of fresh herbs, such as dill, basil, cilantro, or micro greens.
Best eaten warm! Add any other toppings you like: smoked fish, sriracha, bagel seasoning blend!
