Here's what you'll need
Ground turkey, an egg, ginger marinade, ginger paste, breadcrumbs, scallions, and salt.
Form the meatballs
Gently mix together, then use a cookie scoop to form evenly sized meatballs. Use your hands to roll into a uniform shape.
Cook the meatballs
Broil on high for 6 minutes, flip each meatball, then broil an additional 6 minutes.
Make the sauce
You'll need coconut milk, red curry paste, turmeric, ginger paste, water, lime juice, and spinach.
Heat the coconut milk, then add curry paste, ginger, turmeric and water. Add spinach, cooking until just wilted.
Serve the meatballs over fluffy white rice with sauce spooned on top. Garnish with scallions, lime wedges, and fresh cilantro.
