Frozen Greek Yogurt Bites with Cookie Butter

These viral Frozen Greek Yogurt Bites are my family's newest obsession! Creamy Greek yogurt is mixed with cookie butter (or your favorite nut butter), fresh blueberries, and then frozen into bite size portions and dipped in melted chocolate. Finish with flaky sea salt for an irresistible, healthier alternative to ice cream that is every bit as delicious and sure to cool you off on warm summer days. Keep in the freezer for an easy snack!

  • 1 cup (240g) plain full fat Greek yogurt
  • ½ cup (70g) crunchy cookie butter, or your favorite nut butter, warmed in a microwave for 15-20 seconds so that it's pourable
  • 1 cup fresh blueberries
  • 2 cups (340g) semi-sweet chocolate chips
  • 2 Tbsp (30ml) canola oil or coconut oil
  • Flaky sea salt

Instructions

  • Make the yogurt filling. Combine 1 cup (240g) Greek yogurt and ½ cup (70g) cookie butter in a mixing bowl, then stir to thoroughly mix until well blended. Add 1 cup fresh blueberries, then gently stir to incorporate.
  • Freeze the yogurt bites. Use a standard cookie scoop to portion the filling into equal size bites. Place on a parchment-lined baking sheet, then freeze until solid, about 2 hours.
  • Temper the chocolate. Place 2 cups (340g) chocolate chips and 2 Tbsp (30ml) canola oil (or coconut oil) in a microwave safe bowl, then heat in 20-30 second intervals, stirring in between, until fully melted.
  • Coat in chocolate, then freeze. Remove the yogurt bites from the freezer, then dip in melted chocolate. Immediately sprinkle each bite with flaky sea salt. Pop them back in the freezer for as little as 10-15 minutes or store in a freezer for up to 2 weeks!

Notes

  • Storage: Freeze bites airtight up to 2 weeks. Let sit at room temp a few minutes before eating.
  • Diet swaps: Use nut butter for gluten-free; dairy-free yogurt for dairy-free.
  • Flavor ideas:
    • PB&J: Peanut butter + jelly or jam
    • Mint chip: Peppermint extract + mini chocolate chips
    • Tropical: Mango + shredded coconut
    • Strawberry shortcake: Strawberries + graham cracker crumbs
