Juicy, Kofta-Inspired Grilled Ground Beef Kebabs

If you’ve ever wondered why restaurant kebabs are so much fluffier than homemade ones, this is the secret! Adding a splash of club soda to the meat mixture is a total game-changer—it keeps them from getting tough on the grill. These kofta-style beef kebabs are my absolute favorite for a summer cookout; they’re incredibly easy to form and even easier to eat, especially with a big bowl of tahini for dipping!

  • 1 lb ground beef
  • 1 lb ground veal
  • 1 sweet onion, minced
  • ¼ cup finely chopped fresh parsley
  • Tbsp Kosher salt
  • tsp ground cinnamon
  • 1 tsp sumac
  • ¼ cup Club soda
  • Tahini

Instructions

  • Mix the kebab ingredients. Place all kebab ingredients in a medium bowl, then gently mix until combined. Cover and refrigerate for at least 1 hour.
  • Form the kebabs. Divide the meat mixture into 10 equal portions, then hold the skewer in one hand, while using the other to mold the meat around the skewer. Each kebab should be about 5-6-inches long and 1-inch thick.
  • Heat the grill. Preheat a grill over medium-high heat. When hot, either coat with grill spray or brush with olive oil. The easiest way to do this is to pour some olive oil on a crumbled up paper towel, then use grill tongs to rub the paper towel across all the grill grates.
  • Grill the kofta. Place kebabs on the grill, leaving a little space between each, then cook until browned on all sides, about 3-4 minutes per side, for a total of 12-15 minutes, or until cooked through.

Notes

  • Notes: Swap beef and veal for chicken, lamb, pork, or turkey. Finely mince (or grate) the onion for a smoother texture. No skewers? Shape into oblong kebabs or patties and grill as directed—great in pita, too.
