Light, Bubbly Pomegranate Gin & Tonic

This is my favorite way to dress up a classic gin & tonic when I’m hosting. The pomegranate juice gives it such a stunning, ruby-red color that makes it feel like a "special occasion" drink, even though it’s incredibly simple to make. It’s refreshing enough for a warm evening but has that rich color that feels so right for the holidays.

Equipment

Lowball or highball glass(es)

Ingredients

  • 2 oz gin, such as The Botanist
  • 2 oz pomegranate juice
  • Juice of 1 lime, about 2 Tbsp lime juice
  • 4-5 oz tonic water
  • Lime wedges or rounds, for garnish
  • Pomegranate arils, for garnish

Instructions

  • Make the gin and tonic. Fill a lowball or highball glass halfway with ice, then pour 2 oz gin, 2 oz pomegranate juice, and the juice from 1 lime on top. Stir well, then top off with tonic water to fill the glass. Garnish with lime wedges or rounds.
