Here's What You'll Need
orzo, grape tomatoes, red onion bell pepper, english cucumber, kalamata olives, feta cheese, parsley, oregano, olive oil, red wine vinegar, lemon, honey
Bring a pot of water to a boil. Season with salt, add orzo, stir, and cook, about 8-10 minutes, or until tender. Drain, then transfer orzo to a mixing bowl.
Combine EVOO, red wine vinegar, lemon juice and lemon zest, dried oregano, honey, salt, and pepper, then seal. Shake tuntil emulsified. Set aside.
To the orzo, add tomatoes, bell pepper, red onion, cucumber, and Kalamata olives. Drizzle dressing on top, toss well to coat. Add feta and parsley, stir once more. Garnish with oregano leaves.
